Make sure you grease and flour the pan so the cake is easy to remove.
-Once the cake is baked, pull it out of the oven and let it cool for about 20-30 minutes.
-Dump the cake into a large mixing bowl and add 2 spoon fulls of frosting and begin mashing the frosting into the cake with your hands.
-Once all of the frosting is mixed into the cake and it is moist you can begin rolling the mixture into balls with the palms of your hands.
-Place the ball onto a baking sheet or plate lined with wax paper. (You'll be needing to put it into your freezer so whatever will fit is what you should place it on.)
-I prefer to flatten the bottom of the ball and shape the ball into more of a cylinder shape (as shown below).
-Once you have filled the baking sheet or plate with the cake bites place it in the freezer and let it sit for 30-40 minutes until the cake bites have hardened.
-When you are ready to coat the cake bites with chocolate I suggest only taking out 5 or 6 at a time so the rest can keep hard in the freezer.
-You'll need to create a double broiler by placing a metal mixing bowl on top of a saucepan that has water in it. Set it on low-medium heat.

-Then place your Melting chocolates in the bowl and begin melting them.
-Using the toothpicks with the spear on the end, poke the toothpick into the bottom of the cake bite and up through it almost to the top.
-Then stir it around in the melted chocolate until it is completely coated

-Remove the excess chocolate off by tapping the toothpick on the side of the bowl- gently.
-Then carefully scrape the cake bite off of the toothpick and onto a plastic spoon, then slide it off the spoon and back onto the wax paper. This will help reduce the amount of chocolate that will puddle around the bottom of the cake bite.
-Place the tray of coated cake bites in a cool area to harden.
-Repeat until you are finish with all the cake bites from the freezer.
-Wait about 2-3 hours after coating the cake bites before eating.

Here is the finished product.

<img style="margin: 0px auto 10px; Add cabbage and soup and stir until well blended. ON the bottom of a 9x13 pan, put the first pkg. of crescent rolls. Put the meat on that and then add the cheese. Place the 2nd pkg. of rolls on top of this and bake at 350* for 30 mins.
<img width='1' height='1' Remove wrap and back at 350 degrees for 20 minutes or until golden brown.

You can also add a little parsley to give them the Magleby's look.

Thanks to Jade for this recipe.

Chicken Enchiladas

I made these yummy chicken enchiladas for dinner last night! They are good because you make the sauce from scratch and you don't have to use the cream of chicken soup which has a lot of sodium.

Ingredients

8-10 tortillas, flour or corn, I used the uncooked flour tortillas from Costco/Sams and cook them up according to package instructions.
½ cup chopped onions
4 cloves garlic, minced
1 teaspoon ground coriander, optional. I didn’t use it.
¼ teaspoon pepper ½ teaspoon salt
2 tablespoons butter
3 tablespoons flour
1 (8 ounce) carton sour cream
2 cups chicken broth
1 (4 ounce) can diced green chili peppers , can add two cans
2 cup shredded Monterrey jack cheese
3 cups chicken, cooked and chopped/shredded
black olives (optional)
tomatoes (optional)
green onions (optional) Jalapenos, diced (optional) Gives it a nice kick.

Directions

Wrap tortillas in foil and heat in 350* oven for 10 minutes to soften.
For Sauce: In a saucepan, cook onion, garlic, coriander, salt and pepper in the butter until the onion is tender. Stir the flour into the sour cream, and then add to the onion mixture.
Stir in broth and chili peppers all at once. (and jalapenos if adding)
Cook and stir until thick and bubbly.
Remove from heat; stir in 1 C of the cheese.
For Filling: Stir 1/2 C of the sauce into the chicken, mixing well.
Place about 2-3 soup-spoon-size of mixture on each tortilla and roll up.
Arrange rolls, seam side down, in a lightly greased 12x8x2 baking dish.
Top with remaining sauce.
Bake, covered, in 350* oven for 35 minutes. Sprinkle with remaining cheese and bake, uncovered, 5 minutes more until cheese melts. Let stand 10 minutes.
If Desired: garnish tops with olives, tomatoes, and cheese.

Carrot Soup

A friend made this soup for me after I had my baby. Depending on time constraints I'll either use my favorite chocolate cake recipe or a box mix, either works fine, the secret's really in the frosting.

Frosting

1 C fresh raspberries or strawberries
(you can also use frozen if defrosted & unsweetened)
6 T butter, room temperature
4 oz cream cheese, room temperature
1/2 tsp vanilla extract
2 1/2 C powdered sugar

Process the berries in a food processor until smooth. Strain the puree trough a fine strainer into a small bowl, discard any remaining seeds. You should have about 1/3 cup of puree. Set aside.
Beat the butter, cream cheese, and vanilla extract in a large bowl using an electric mixer on low speed. Beat until smooth and completely blended, about 1 minute. Gradually add the powered sugar, mixing until smooth, about 1 minute. Mix in puree and beat on medium speed about 1 minute to lighten the frosting. Depending on desired consistancy, more powdered sugar may be added for a thicker frosting.
Using a spatula or pastry bag frost cupcakes with 2 to 3 tablespoons of frosting. Sprinkle with your favorite jimmies or sprinkles. Enjoy!

Frosts about 24 Cupcakes.

Thai Coconut Chicken Curry

I made this yesterday for dinner, and it turned out super yummy! I made it a few weeks ago and it was really tasty. I don't think the dressing tasted like Cafe Rio's, but it was tasty. The tortillas were really good though. You can use any of these recipes to make Tacos, salads or whatever you want.

Cafe Rio Creamy Tomatillo Dressing
1 package Hidden Valley Ranch
1 cup mayo
1 cup cilantro, chopped
2 cloves garlic, chopped
3 tomatillos - peel off paper, chop
1/3 - 1/2 cups buttermilk, to consistency you want
1/4 tsp. cayenne pepper (optional)

Put in blender and mix.

Shredded Cafe Rio Pork
3 lbs pork
16 oz. bottle of chunky salsa (blended in blender so chunks are gone)
1 can coke
2 cups brown sugar

Place pork in crock pot and fill it 1/2 way up the pork with water. They are so easy, you can just throw it all together last minute! This is a made up recipe, so there aren't exact proportions, it usually just depends on how many you want to make it for.

Ingredients:

Red, yellow and orange peppers

1 can pineapple chunks

purple onion

tortillas (I prefer the ones that you cook yourself from Costco)

rice, cooked

sour cream

KC Masterpiece Fajita Marinade

few breasts of chicken

I like to buy the bag of colored peppers from Costco, cut them all in strips and freeze what I don't use.

Combine peppers, purple onion, and can of pineapple WITH juice in a large skillet. Cook until peppers are hot and tender but not too flimsy.

Shred cooked chicken (I will either boil chicken or buy a cooked chicken at Costco if I am real lazy) and apply the marinade until all the chicken is covered.

Cook rice.

Cook Tortillas.

Serve tortillas with a combination of rice, peppers mix, marinaded chicken, and sour cream.

They are light and YUMMY! Thaw in refrigerator for 24 hours, and bake uncovered until dish is bubly and browned. The frozen casserole can also be cooked in the oven without thawing: remove plastic wrap, cover with the foil, and bake until bubbling. Remove foil and cook until browned.

2 slices white sandwich bread, torn into small pieces ( use food processor if needed)
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 1/4 cups milk
2 cups of shredded cheese (8 ounces)
ground pepper
salt

1 tbls unsalted butter, melted
1/4 ounce Parmesan cheese, grated (about 2 tbls)

Cook macaroni according to package directions; drain well.

Meanwhile, for topping, mix the torn bread and melted butter well with a fork. Toss with Parmesan cheese; set aside.

Meanwhile, for cheese sauce, melt butter in a saucepan. Stir in flour until completely incorporated. Add milk all at once. Cook and stir until slightly thickened and bubbly. Add shredded cheese; stir until melted. Season to taste with salt and pepper.

Stir macaroni into cheese sauce. Transfer to a 1 quart casserole. Coat casserole with topping. Bake, uncovered, in a 350 degree oven for 25-30 minutes or until bubbly and browned on top. Let stand 10 minutes.

1. Just about any cheese will work; good ones are cheddar, Colby, Monterey jack, and Gruyere. Goat and blue are great when used with other cheeses.

Olive Garden Salad

Olive Garden Salad

Salad Ingredients:
1-2 heads of iceberg lettuce
red onion, sliced
black olives
banana peppers
croutons
tomato, chopped
fresh Parmesan cheese

Dressing Ingredients:
1/2 C.
